Pork Loin with Chipotle

Drizzled in orange chipotle sauce infused with herbs, this tangy pork loin is matched with a twist on sweet potatoes in a dish that is mouth-watering.

Ingredients

Pork Loin with Orange Chipotle Sauce

  • 1-1/2 lbs. pork loin, boneless
  • 1/4 tsp. black pepper
  • 1 2/3 cup low sodium beef broth
  • 1 2/3 cup low sodium chicken broth
  • 1 tsp. olive oil
  • 1/4 cup fresh shallots, diced
  • 1/2 cup orange marmalade
  • 2 1/2 tsp. chipotle pepper adobe sauce
  • 2 1/2 tsp. water
  • 1 tsp. corn starch

Coconut Roasted Sweet Potatoes

  • 2 1/2 cups fresh sweet potatoes (medium), diced
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1 1/2 tsp. lime zest
  • 1 1/2 tsp. shredded coconut, toasted

Steamed Broccoli

  • 2 1/2 cups fresh broccoli florettes
  • 5 tbsp. lemon juice
  • 1 1/4 tsp. Mrs. Dash

Directions

Pork Loin with Orange Chipotle Sauce

  1. Pre-heat oven to 350F.
  2. Season the pork loin with black pepper; bake until an internal temperature of 155 degrees F is reached.
  3. Combine beef and chicken broths in a saucepan, heat to boil; reduce to half, about 45 minutes.
  4. In a sauté pan heat the oil over med-high heat; add the shallots, cook until tender.
  5. Add the broth reduction, marmalade and chipotle sauce; simmer for 5 minutes.
  6. Mix water and cornstarch together; whisk into the sauce, cook until sauce is thickened.

Coconut Roasted Sweet Potatoes

  1. Pre-heat oven to 350F.
  2. On a sheet pan coated with non-stick cooking spray, spread out potatoes evenly; season with salt and pepper; roast until tender, about 40 minutes.
  3. Transfer to a bowl and toss with lime zest and toasted coconut.

Steamed Broccoli

  1. Steam the broccoli until tender.
  2. Toss with lemon juice and Mrs. Dash seasoning.

Plate Assembly

Serve (2) 1-1/2 ounce slices of pork loin with the orange chipotle sauce divided equally among the 5 plates with 1/2 cup of sweet potatoes and 1/2 cup of steamed broccoli per serving.
