    Heart-healthy recipe: Sweet potato fries

    In addition to eating healthy, you can find more ways to have a heart-healthy lifestyle at the Intermountain Medical Center Heart Institute's FREE Family Heart Fair on Saturday, Feb. 6 from 9 to 1 p.m. 

    INGREDIENTS

    • 4 large sweet potatoes (not yams)
    • 1/3 cup olive oil
    • 1/4 cup maple syrup
    • 1/2 tsp cayenne pepper (optional)
    • 1 tsp seasoning mix, like Mrs. Dash
    • Pepper, to taste
    • 2 tsp cinnamon

    DIRECTIONS

    1. Rinse and peel the sweet potatoes and cut into 'fries'
    2. Mix all of the ingredients into a large bowl and coat the fries evenly
    3. spread in a single layer onto a baking sheet
    4. Bake at 425º F for about 15 minutes
    5. Turn fries with a spatula and bake 10-15 minutes longer to desired crispness
    6. Serve hot.

    SERVES 8 (serving size: 1/4 dinner plate)
