Chips and dips are popular at most any party, but not all dips are created equal, and even fewer are healthy options. This black bean dip is both healthy and delicious. Every time I bring it to a party, the bowl comes home empty and people ask me for the recipe. So, here it is:
INGREDIENTS
1 can black beans (low sodium), drained
1 can corn (low sodium), drained
1 can diced tomatoes with green chilies
2 cloves garlic, minced
½ bunch cilantro, chopped
1/3 cup onion, chopped
1 avocado, chopped
Juice of 1 lime
Juice of ½ lemon
Dash hot sauce (optional)
Salt and pepper to taste
DIRECTIONS
Mix in large bowl, cover and let sit in refrigerator for 2-3 hours or overnight to blend flavors.
