The recipe is simple, but absolutely delicious, and a great preparation for kids to enjoy.
- 2 pounds fresh asparagus, medium thickness
- Olive oil
- Salt and Pepper, to taste
Preheat oven to 400 degrees F.
Break off tough ends of asparagus. Place on a baking sheet and drizzle with olive oil (it takes less that you would think). Toss to coat the asparagus completely. Spread asparagus out in a single layer on baking sheet and sprinkle with salt and pepper. Roast for about 25 minutes until tender-crisp.
Note: I’ve also ended this dish with a sprinkle of Parmesan cheese or a drizzle of balsamic vinegar but found that I like the basic method the best.
