Autumn Vegetable Soup

Soup season is here and there’s nothing more satisfying than warming up with a hearty vegetable soup. Soups are a great way to add in lots of healthy vegetables that are chock full of vitamins and nutrients our bodies need. This easy fall soup will warm you up in just the right way.

Ingredients

  • 1 sweet potato
  • 1 onion
  • 3 carrots
  • 2 T olive oil
  • 1/8 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/4 tsp ground cumin
  • 1/4 tsp turmeric
  • 4 cups vegetable stock
  • salt and pepper to taste

Preparation

  1. Place all ingredients in a crockpot on high for 4 to 6 hours.
  2. Blend ingredients together by using an immersion blender or blend in batches in a blender until smooth.
  3. Enjoy!
