Shrimp Scampi

Servings: 4 Serving size: about 2 cups

Ingredients: 

8 ounces whole wheat linguine (about half of a package) 

2 cups frozen peas 

2 tablespoons unsalted butter 

1 pound medium shrimp, peeled and deveined 

2 Tbsp. minced garlic 

1 tsp. crushed red pepper flakes (optional) 

¼ cup low-sodium chicken stock 

¼ lemon juice 

1 Tbsp. black pepper 

Zest of 1 lemon 

2 Tbsp. dried parsley 

¼ cup reduced-fat Parmesan cheese 

Preparation:

1. Prepare pasta according to package directions. In last two minutes of cooking, add peas. 

2. Melt butter in large skillet over medium-high heat. Add shrimp, garlic, and red pepper flakes. Cook, stirring occasionally until pink, about 3 minutes. 

3. Stir in chicken stock, lemon juice and black pepper. Bring to a simmer then remove from heat. 

4. Drain pasta and peas. Stir in pasta mixture, lemon zest, parsley and Parmesan cheese. 

5. Serve immediately.
