Makes about 6 servings
- 1 pound chicken breasts, boneless, skinless
- 1 green pepper, sliced
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1 onion, halved and sliced
- ¼ cup olive oil
- 2 tsp chili powder
- 1 tsp cumin
- ½ tsp garlic powder
- Pinch chili flakes (optional)
- 1 tsp salt
- ½ tsp ground black pepper
Heat oven to 400 degrees. Mix oil, chili powder, black pepper, cumin, garlic powder, salt, chili flakes; stir mixture together. Mix all ingredients in large bowl, coating vegetables and meat with sauce. Spread on large sheet pan. Bake for 25-30 minutes, until veggies are soft with a crispy edge. Serve on tortillas with avocados and cilantro.
