    Heart-healthy recipe: Peanut butter banana roll

    In addition to eating healthy, you can find more ways to live a heart-healthy lifestyle at the Intermountain Medical Center Heart Institute's Free Family Heart Fair on Saturday, February 6 from 9 a.m. to 1 p.m. 

    INGREDIENTS

    • 2 slices whole wheat or whole grain bread
    • 1 peeled banana
    • Roughly 1/2 cup peanut butter

    DIRECTIONS

    1. Remove crusts from bread.
    2. Lay 2 slices of bread on the counter next to each other, slightly overlapping to create 1 big rectangle.
    3. Push together at the overlap and roll with a rolling pin to flatten.
    4. Spread an even layer of peanut butter (or you could use almond butter or apple butter) on the bread.
    5. Roll up the bread around the banana.
    6. Slice each log into 6 even pieces, much like a sushi roll.
    7. Serve.
